Your "carousel" (which is the wrong term, it's a slideshow or image slider) should have the ability to have overlay text over each image (add an additional field for each image). Or text could even go below or on the left/right of the image (maybe as an option). This is something most everybody uses. Having to edit an image to add text is not the way to do it as it doesn't scale in a readable fashion with screen sizes. FlexSlider (that you use) even has some documentation on how to do this.
